Cake base ingredients
- 25 grams of almond flour

- Frozen strawberries 150 g.
- Erythritol 20 g
- 1 teaspoon lemon juice
How to Cook Strawberry Yogurt Mousse Cake
1. Start making the cake base by pouring the melted butter into the almond flour. Mix them together until they are coarse grains. Put the flour into the round mold. Press firmly and refrigerate.
2. While waiting for the base to set, let’s make strawberry sauce. Pour the strawberry, erythritol and lemon juice into a bowl, mix the ingredients together and put in the microwave for 2 minutes. then blend with a blender.
3. Make mousse cakes by soaking the gelatin sheets in water. While waiting for the gelatin to be soft Whip the whipped cream to rise 50%. In this step, divide the whipping cream into 1 tablespoon of soft gelatin sheets and heat in the microwave for 20 seconds to let the gelatin melt into a homogeneous consistency.
4. Another mixing bowl, add yogurt, erythritol, whipped cream, melted gelatin. Strawberry sauce and lemon juice, stir well with a whisk. Then add 50 grams of whipped cream (another 20 grams for topping the cake), gently fold to combine. Then pour into the mold and refrigerate for 5-6 hours. Decorated with whipped cream and strawberries.
