Ingredients (for 4 servings )
- 1/4 cup steamed Japanese pumpkin puree
- 1/2 cup whipping cream
- 1/4 cup fresh milk
- 1/4 cup granulated sugar
- 2 eggs
- 1/4 teaspoon ground salt
- Pumpkin Spice 1/2 teaspoon
- French bread, diced 1 inch 2-2 1/2 cups
- 1/4 cup raisins
- 1/4 cup rum
Pumpkin Bread Method.
Preheat oven to 350 degrees. Spray an 8″ X 8″ baking pan with nonstick spray.
- Soak raisins in rum for 1-2 hours. Prepare.
- Mix pumpkin puree with whipping cream, fresh milk, sugar, eggs, salt and Pumpkin Spice. Stir well with a hand whisk. Add the prepared raisins.
- Place the bread in a ceramic baking bowl. Pour the pumpkin mixture over and let it sit for 15-20 minutes until the bread is soaked.
